It is the custom at Mbingo Baptist Hospital for a new surgeon to buy lunch for the OR employees. It's a pretty festive affair and you get to try to learn people's names and sample the local, traditional food. If no-one was "on the hook" for lunch sometimes one of the doctors would buy lunch anyway. $15 bought lunch for everyone. We had a meal together about once a week during the month I was there.
